Cashew Nut Cheese

Try this simple, satisfying cashew cheese recipe and vive la difference!

1 cup cashews, soaked overnight (in a bowl of water) and drained

2 tablespoons extra virgin olive oil

1 teaspoon sea salt (more or less to taste)

juice from 1 lemon

1 clove garlic, minced

Put all in a food processor and pulse for 20 seconds. Scrape down the sides and blend for 20 seconds. Scrape the sides down again and blend until smooth and creamy. Store in refrigerator.

Cashews are lower in fat than most other nuts. The majority of the fat in cashew nuts is the healthy kind of unsaturated fat that you find in olive oil - oleic acid, which actually protects the heart and lowers triglyceride levels. Cashews are also high in magnesium (healthy bones, lowers blood pressure) and tryptophan (helps regulate sleep and boost mood).
